I tried out a new recipe for jam this long weekend.
It was for plum amaretto jam.
I love jamin' fruits that have enough natural pectin in them so that you don't need to add any. They always seem to thicken much better and they come out a lot less clumpy/ lumpy.
Well the result was pretty darn tasty, it tastes just like amaretto! (perhaps I went a little heavy on it ops!) It's also very very tart despite the sugar!
I must say, the more I make jam, the more I enjoy making jam. I love having jams that are not available to the public and even when they flop, (and believe me I've made some really really awful "jams") I learn something.
I think I'll call it "plums and booze"
I did make a slight adjustment, as I used tart yellow plums, as apposed to sweet purple plums.
